Hi has anyone got a good banana bread recipe using fiber flour ?

I made the Banana and Pecan Bread and following your advice I only used 2 bananas. It was delicious. So definitely recommend it

That looks really good Gillian! Another tip if you want to keep the carbs lower is just use 1 banana and add a few drops of banana essence. I made banoffee cupcakes the other week without using any actual banana at all ;-)

Hi J, Yes we have a banana bread recipe on our recipe page https://www.lonjevity-foods.com/banana-nut-bread. In fact these quick breads are very easy to do by just subbing the flour and sugar with Fiberflour and Fibersugar in almost any of the popular recipes out there. You can use either utra-fine or regular FF or a blend of each. More skill is needed with bread doughs but quick breads using baking powder for rising usually work out fine.

I’m hoping to try this if I can manage to hide the bananas for long enough. The recipe references 11g of carbs but 17g of Fibre, this confuses me as under Keto you detract the carbs from the fibre to establish the net carbs, so how would you calculate the carbs in this recipe as I’m unsure if this is safe for me to eat

@Gillian Shannon In UK and EU fibre is listed separately from carb. So here the carb value is always the net carb value. Only in USA is fibre listed as a subcategory of total carb, so to calculate net carb from total carb you need to subtract fibre (and sugar alcohols if they are in the food as well). So much confusion over this one issue GRR!

If you are really a keen keto follower you might want to go easy on the banana though. But in practice the fibre slows down the absorption of the carbs so not much of a glycemic effect from banana bread.

I find the Foodie Flavours brand of essences very good and natural tasting - I got mine off Amazon (as an aside their pineapple essence makes a great low carb pina colada!)
