I halved the measures just in case it didn’t work for me and amazingly the bread turned out great. Nice and light and not the normal house brick I have produced in the past.

I bought my first bread machine (sending it back tomorrow) this one has a very small mixer paddle which draws the mix to the middle, problem is, with this mix and with almond flour and psyllium husk mix, it does not draw it to the paddle, the paddle simply spins round creating a hole in the centre, so it does not mix. I think this must be due to the mix being heavier / thicker, so I am returning it tomorrow. After more research, I have bought a digital bread mixer that also does the fermentation process and bought several baking tins, all arriving tomorrow. fingers crossed but I suspect this is going to be the way forward for me. I have just ordered the Fibersugar, but am unable to find a reference to it's glycaemic index, does anyone know this please ?

Thank the Lord, those bread machines have been very trick, hope lots of others can make it work too. Good move to use just 250g Fiberflour rather than 500g.
