    Lemon Drizzle Cake

    Cream 225g Butter with 225g Sugar or Sweetener. Add 4 beaten eggs. Add 225g FibreFlour and fold in. Add Lemon zest to taste. When cooked use a cocktail stick or cake tester to make holes all over. Pour over a mix of Lemon Juice and Sugar/Sweetener.

    Each slice will be 3 - 4 Carbs if using Fibreflour & Sweetener if cut into 8 - 10 slices.

    Just to add I forgot to put Baking Powder in mine but it still had a decent rise on it.

    I was diagnosed as a diabetic last year after a year of very bad health and poor eating habits. II discovered a FB group which was advocating the Low Carb way of life and so I swapped over to this way of life. I'm now back to non diabetic levels but am continuing as I also need to lose weight. I had tried Almond Flour and Coconut Flour and whilst some results were okay, others just weren't. I then heard about another type of flour and during my search for it came across FibreFlour. After receiving my first order, I started trying out all my old recipes and some new ones. I've had cakes, biscuits and Pastry for quiche and sausage rolls, as well as Toad in the hole and Yorkshire Puddings. Some have needed tweaking a little, others came out just right.

    I shared the cake with my family and they all loved it. Scones wrill be next on my list to try. I'd lost my love of baking, am so glad I found something that has brought it back.
