I'm so excited to post this recipe! I wanted to make doughnuts for a long time, but motivation came today after my daughter asked me to buy her one while shopping for groceries. Needless to say I refused to and promised her we'll make them at home. For a starter I used: 10g dried yeast 250ml milk alternative 1 tbsp sugar Mix together and leave on the side until gets bubbly 4 egg yolks 400g UFFF 40g sweetener (I used allulose) Pinch of salt 2 tbsp vodka/rum (not necessary) 50g melted and cooled butter Mix all ingredients together, add yeast starter, mix using stand mixer with dough hook attachment for about 5 minutes. Dough is supposed to be soft and a little sticky. Cover with cling film and leave in warm place for 60-90 minutes until it doubles in size. Flip it over onto the counter top dusted with flour and roll to about 2-2,5 cm thickness. Cut desired shapes and sizes. Roll out cutoffs and repeat,nut make sure not too add too much flour in the process, that may make dough hard and less airy. Heat 1l of oil/lard in wide pot to 175C degrees and fry doughnuts for 2-3 minutes each side. Finish off with royal icing (egg white mixed with 2 cups of powdered sweetener- I used allulose). They're incredibly soft and fluffy, I bet they could be made with marmalade/jam (added before frying or after). I'll try to make them with rose marmalade for next year's doughnuts day (Polish version of pancake day in UK 😄)
