I had my annual check with the DN this week. Praised me on an Hb1ac of 34, but just like last year, showed disapproval at a low carb diet. People need to be educated!

I normally start by a straight swap and then adjust if the mixture looks too wet/dry. Not often I have to add though. For a cheese sauce I use cream, cream cheese and cheese, but it does work out higher in fat than using flour.

Fibreflour in my opinion. Ultra fine seems to fall apart easier.

Sorry. I forgot to mention that I also added a few drops of water. I also put it in the freezer for a few minutes before rolling out. MaggieTopkis - Yes, I did blind bake it first.

I've used both but the one above was Fibreflour. I find the finer one doesn't hold together as well when it comes to pastry.

I have realised that you ned to use more flour if using the ultra fine, around 50 - 75g more, and no water.

No, it doesn't count fibre. They tasted lovely, though I will add a little bit of mustard powder next time as it brings out the cheese flavour better.

They've gone in the freezer. But your estimation is most likely correct. I use nutracheck to work out the macros of my recipes and this is what it comes up with for one scone.

Thanks. I was trying to work out how I could get six scones that were roughly the same size with no leftover dough, then I realised I could just make one large one and cut into six.

Looks undercooked but it was fine, maybe another 30 seconds would have got it just right.

I made the fat head ones too and no-one liked them. Will give these a try.

Looks lovely. I tried bacon roly poly today but it wasn't too great. quite dry and hubby overcooked it in the microwave. I also used the normal flour so will use ultra fine next time.

I want to try some recipes with yeast. I've made a scone based pizza with FF and that was lovely. Yours looks very yummy.

I guess being able to have baked goods again makes me happier. I have a number of health issues so they probably mask any changes or benefits. I do however have to watch my fibre intake due to no gall bladder and severe IBS but have found this flour does not present too much of an issue.
