@Caroline Godfrey- Bridgeman In my bread machine I normally use 300g UFF with 200g FF and it is the best bread machine ratio I have found with FF. I'm going to try 100% UFF again in the bread machine as well.

This is useful, I will look for the videos. I guess they may have lost the tension due to the cling film touching. Thanks a lot

My first attempt. I have no bread making experience (apart from being good at turning on a bread machine!) But I decided to give these a go without the machine. I used a tablespoon and scales to divide my dough into 8 balls of 80-85g. Thanks for the tip about the tension on the top and I’ll try to improve that. I proved them in my oven, which had been on an hour earlier and I put a large bowl of boiling water underneath, a probing technique I googled, as no Aga for proving. So it looks like they proved quite well. I think I didn’t preheat the oven for long enough (as the rolls had been proving in it. But they were cooked in 12 mins at 180 no fan so I think that may have been too hot as they are a bit over cooked on the outside. 90 degrees inside with meat thermometer and that was very useful to know. They look more like foccacia than rolls as they are low and flat. Any tips on improving my technique would be great. Thanks for the recipe!

I must try them. Have you calculated the carbs etc? Do share if you make them into hot cross buns. The problem I have is I love sultanas but they are so carby! I soak them in hot water for a while first to plump them up so they go further but still not compatible with low carb!

Right now I’m about to start trying to be properly low carb again after falling off the wagon over Christmas. I have mainly maintained weight that I lost a year ago by having your bread but as I say I haven’t been very rigorous recently.

That is great news. I think it is a great recipe with this great flour and it never goes wrong. By the way Gerry, @Gerry Davies I suggest you sell a single ‘bread machine mix’ product sample on your website. It might help people get started with your flour easily.

I will leave this to someone with actual bread making skills to comment on! I only know how to measure ingredients and turn on the machine!!!! Perfect every time. I have never made real bread and my attempts with FF were a flop but I am sure that was my kneading etc. I recently suggested my sister get a bread machine on eBay so she can make this and she found one. But if you know how to make bread you can compare this recipe to other ones and see the difference.

Hi Sarah, I tried several times making bread in the oven and I kept burning it, and it was dense and dry. (I might add that I have no breadmaking skills whatsoever, so that is probably the issue!!) However in the bread machine it works every time and it is soft with the texture of normal bread. Can't go wrong.

As you say, it is hard to make normal bread too. I was impressed with the flatbreads. Gerry, Maybe you should sell a ‘bread mix’ which is 50:50 UF to FF or so for newbies? I am glad I went ahead and bought the UF after just getting FF initially, but I would hate for anyone to give up after just trying 100% FF which I found a bit strong on taste.

I recommend this low carb beer I’ve found which is 0.9 per 100ml and delicious. I bought 12 on Amazon to try it out.
