A low carb, high fiber breakfast
Red Onions 4 chopped
Fresh or Dried mixed Herbs 15-30g
Baking Powder 10g
Grated Cheese 100g
Measure flour, salt and baking powder into mixing bowl, mix all together for your dry ingredients.
Melt butter and when cooled a little add eggs and beat all together.
No need to fry onions as previously described but recently I tested a much simpler recipe where you finely chop onions, garlic, fresh herbs and add all to the mixer with melted butter and egg mixture. Add grated cheese and run the mixer until everything is well combined.
Using a scoop drop 30-40 g of batter into muffin cases.
Bake at 180 C fan for 20 minutes.
These scones/muffins are such a convenient quick meal, serve with fresh salsa, pesto, chutney and cheese. Glass of red wine. Experiment and let us know what you come up with;)
