Ultrafine FiberFlour 200g
Eggs 4 200g
Yeast 2g (1/2 tsp.) optional
Baking Powder 4g
Combine all of the ingredients together and whip until mix is thin and smooth, transfer to a pouring jug.
Put 3-5 ml oil in the 12 compartments of a muffin tray and place in a hot oven 210 C
When up to temp. pour enough batter to top off each muffin compartment of the tray.
Bake for 20-25 minutes
You could add half a teaspoon of yeast to produce a more bubbly mixture, I like yeast because it improves nutrition at the same time as reducing carbs, yeast makes vitamins out of carbs!
If you have any leftover keep in the fridge for a week or so, you can use the same recipe for pancakes
