Chocolate Chip Cookies

Our low carb take on a classic dessert

INGREDIENTS
 

Baking Powder                     2tsp

FiberFlour                             200g
Eggs                                     2
Butter                                    100g
FiberSugar                              75g
Vanilla extract                       1
tsp

Whole oats                            150g
Salt                                             2g
Dark Chocolate Chips            200g
Chopped walnuts.                    50g

Cream for consistency    100-200g 

Tips: Add milk if you'd like a gooy-er cookie.                 


Makes about 40 x 20g cookies

Instructions

  1. Combine all the dry ingredients, flour, baking soda, sugar substitute and salt.
  2. Mix in the oats, walnuts, and chocolate chips.
  3. Add melted butter, beaten eggs and around 100g cream mix for a few seconds and add more cream or milk to get a not too dry batter consistency that can spread when baked in oven. 
  4. Scoop onto baking sheet/paper. No need to flatten as they should spread easily while baking.
  5. Bake at 160°C for 12-15 minutes and let cool for 5 minutes before transferring to a wire rack to fully cool.
