Chocolate Chip Cookies
Our low carb take on a classic dessert
Baking Powder 2tsp
Vanilla extract 1tbsp
Quick-cooking oats 400g
Sugar-Free Chocolate 300g
Chopped walnuts. 50g
Makes about 80 x 20g cookies
In a large bowl, cream together the butter and sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended.
Mix in the quick oats, walnuts, and chocolate chips.
Scoop onto baking sheet/paper. No need to flatten as they spread easily while baking.
Bake at 160°C for 12-15 minutes and let cool for 5 minutes before transferring to a wire rack to fully cool.
Tips: Add milk if you'd like a gooy-er cookie.
