I used to make my bread by hand ind in my bread machine no longer I now make tortilla's or flat breads they are so much more convenient and only take 45 minutes to make The recipe is
400 grams fiber flour
300ml hot water
3 tablespoons oil /rape or olive
1 teaspooon of salt
mix the salt with the flour then add the hot water and oil in a bowl ,you can add garlic powder if you are a garlic fan , dump the lot out onto a slight floured board and kneed it for 2/3 minutes, this makes 8 tortilla's so you half your dough half it again then quarter it so you have 8 pieces of dough, you need to then roll out your dough as thin as possible i use a silicone mat over a wooden board , you then need and this is important or they won't turn out so good a cast Iron frying pan I use a large one 12 inches/30cm in diameter , and it must be very hot no need to oil the pan just place your rolled out tortilla in the pan and leave till it has a rather few brown spots on it about 2/3 minutes ,you can press the bumps down with a spatula minutes turn it over and do the same to the other side leave to cool ,when cool you place each tortilla in a large sandwich bag I cut the sliding sealer off you don't need it then you place you 8 tortilla's in the freezer and take one out when you need it
this is so convenient and easy and no yeast is required when you take your tortilla out place it in the microwave for about 2 minutes they are fold able so you can add your filling and roll it up I usually add lettuce onion tomato slices and cheese you can add whatever filling you like
Great recipe, by any chance do you check blood sugars an hour or less after eating, if so can you post results? or any other outcomes? Cheers
Yes my blood sugars are within normal range ,I don't prick anymore I use the freestyle Libra and test myself at least 60 times a day, it is expensive but you do claim the VAT, and each sensor costs around £48 and last for 2 weeks,I buy 2 at a time which cost me £98 and lasts me a month . when I eat my Tortilla's I do not get a spike in my bloods, when using Fiber Flour, after using the Libra I cannot bring myself to go back to finger pricking, Testing bloods by finger pricking for me now is like going back to the dark ages, My Hba1c was around 14 So I was sent to a diabetic clinic by my GP and was given the right advice and my medication was increased and changed ,This is the reason I now use the Libra I no longer go back to the diabetic clinic I am back with my GP appointments , and my last HBA1c a few weeks ago was 6 which I am very pleased with,I follow a low Carb diet I have cabbage soup every day which I make from spring greens , everything I now eat is low Carb or no Carbs
