I realise that to proper bakers, what I am about to ask for is mildly sacrilegious - but this is a real 'needs-must' request.
Does anyone have a 90-second/2-minute-style microwave recipe for creating quick bread with Fiber-Flour?
I am going to be spending considerable time in a paediatric hospital ward over the next few months with my daughter. Trying to find low-carb, Type-2-friendly food is a challenge in hospitals as they are still in the 'just have wholemeal bread instead it's good for Type-2' mindset, and my blood sugar absolutely disagrees.
So, I am hoping to be able to pre-pack some dry ingredients in single-serve zip-loc bag portions and then just add wet ingredients on site (eggs that have not been previously refrigerated will store fine in the bedside hospital drawer for a week at room temp), and nuke it. I can make 90-second linseed bread that way fine, but it's very dense, lacks flavour and frankly, I am a bit over it. I have both versions of FF and would love to be able to use it.
Any recipes would be so appreciated. In fact, any baked goods with a microwave could be sanity-saving.

Hi Kel, Gerry here, I will do some experiments and let you know how it goes. The quickbread recipes with baking powder work with regular FF and an oven, the only thing I haven't tried is the microwave part.
