This recipe is much loved in our house. Basically its a cheese blini, super easy and quick to make. Recipe is:
50g ultrafine Fibre flour
2 medium eggs
half a spoon baking powder
100g cubed cheese (your choice, I use cheddar and sometimes feta too)
chives
a few chilli flakes (optional)
salt and pepper
Mix the batter to a smooth silky consistency, preheat a frying pan on medium heat and melt butter in it.
Add the rest of the ingredients to bowl, then spoon into the (non stick a must) pan into the size you want. (I use a small pan and make pan sized ones. Fry over a medium heat until it bubbles through the mix and the edges of the blini are firming up then flip. Should be golden brown and the smell of caramalising cheese should be in the air. Serve with a spread of cream cheese on top when cooked.
Around 7-8g carbs for the entire batch.

Mod’d your fab recipe to 25g UFFF, 1 egg, Baking Powder, and Maple Syrup to make one large portion of scotch pancakes! Yum!

Do you need to grate the cheese or what size are cubes. Do they melt in with the batter when cooking??
