Chocolate Chip Cookies
Our low carb take on a classic dessert
INGREDIENTS
Baking Powder 3tsp
FiberFlour 200g
Eggs 2
Butter 125g
FiberSugar 75g
Spices (mixed) 2tsp
Double Cream 100g
Salt 2g
Chocolate chunks or chips 200g
Makes about 40 x 20g cookies

Instructions
After countless experiments with choc chunk/chip cookies I finally made the best ever. You need a mix that spreads when baking and can be just dropped onto a cookie sheet with a batter scoop rather than flattening to get the ideal shape needed. Add some milk if the mixture seems too stiff to flow when baking. The photo here is this exact recipe.

Add flour, sugar, salt, spices and baking powder to mixing bowl and mix well.

Melt butter and let cool, beat in eggs into melted butter.

Add wet ingredients to flour mixture and continue mixing add cream and chocolate chips or chunks.

Mix for a short while more until a smooth thick consistency.

Scoop onto baking sheet/paper using a batter scoop makes short work of it. The ones in the photo are 20g cookies. No need to flatten as they spread easily while baking.

Bake at 160°C for 15 minutes, or until golden brown but not burnt like the ones in our video below ;)
