FiberFlour Ultra-Fine                                   100g

Butter                                                           100g

50/50 Cheddar/Parmesan grated cheese    100g

Salt                                                            1/4 tsp

Baking Powder                                                5g

Mustard powder                                           2 tsp

Cayenne  to taste                                      1/4 tsp

  1. Add Flour, baking powder, mustard powder, spices and salt to a food processor.

  2. Add butter cut into chunks and grated cheese.

  3. Run processor for a few seconds until the mixture comes together cleanly from the side of the processor.

  4. Roll out the dough and cut into shapes.

  5. Makes about 40 4cm diameter 7g biscuits

  6. Lay them on a baking sheet with grease-proof paper and bake at 160°C for around 7-10 minutes or until golden brown.

  • Alternatively, form into a log about 5 cm diameter, wrap in cling film and refrigerate until it can be cut cleanly with a sharp knife into .5 cm or less discs.

  • Baking longer at lower temperatures gives crunchier biscuits.

  • Add seeds to give extra crunch to your biscuits; a mix of sesame and linseeds works well.
