Cheese Biscuits

Would you like some fiber with that?

INGREDIENTS
 

FiberFlour Ultra-Fine                                   100g

Butter                                                            50g

50/50 Cheddar/Parmesan grated cheese    100g

Salt                                                            1/4 tsp

Baking Powder                                                5g

Mustard powder                                           2 tsp   

Cayenne  to taste                                      1/4 tsp

Water                                                        1-2 tbs

 

Instructions
 
  1. Add Flour, baking powder, mustard powder, spices and salt to a food processor. 

  2. Add butter cut into chunks and grated cheese.

  3. Run processor for a few seconds until the mixture resembles breadcrumbs.

  4. Add a little water until it comes together cleanly from the side of the processor.

  5. Roll out the dough on a baking sheet and cut into squares using a pizza roller cutter.

  6. Alternately make 4cm diameter 7g biscuits with round cutter as shown in picture

  7. Lay them on a baking sheet with grease-proof paper and bake at 160°C for around 7-10 minutes or until golden brown.

 

Tips:

  • Alternatively, form into a log about 5 cm diameter, wrap in cling film and refrigerate until it can be cut cleanly with a sharp knife into .5 cm or less discs.

  • Baking longer at lower temperatures gives crunchier biscuits.

  • Add seeds to give extra crunch to your biscuits; a mix of sesame and linseeds works well.
