Cheese Biscuits

INGREDIENTS
FiberFlour Ultra-Fine 100g
Butter 50g
50/50 Cheddar/Parmesan grated cheese 100g
Salt 1/4 tsp
Baking Powder 5g
Mustard powder 2 tsp
Cayenne to taste 1/4 tsp
Water 1-2 tbs
Instructions

Add Flour, baking powder, mustard powder, spices and salt to a food processor.

Add butter cut into chunks and grated cheese.

Run processor for a few seconds until the mixture resembles breadcrumbs.

Add a little water until it comes together cleanly from the side of the processor.

Roll out the dough on a baking sheet and cut into squares using a pizza roller cutter.

Alternately make 4cm diameter 7g biscuits with round cutter as shown in picture

Lay them on a baking sheet with grease-proof paper and bake at 160°C for around 7-10 minutes or until golden brown.
Tips:

Alternatively, form into a log about 5 cm diameter, wrap in cling film and refrigerate until it can be cut cleanly with a sharp knife into .5 cm or less discs.

Baking longer at lower temperatures gives crunchier biscuits.

Add seeds to give extra crunch to your biscuits; a mix of sesame and linseeds works well.
