Bara Brith
Fruit quick bread from Wales. A low carb, high fiber meal to go
INGREDIENTS

FiberFlour 300g
Eggs 2
FiberSugar or Substitute 50-100g
Mixed spice 5-10g
Baking Powder 10g
Mixed Fruit, raisins etc 400g
Tea 300 ml

Instructions

Re-hydrate the dried fruit really well. Traditional Welsh recipe does this overnight in strong tea.

Thoroughly combine flour, sugar, spices and baking powder.

Combine eggs, fruit and tea mixture with dry ingredients.

Pour into 1 lb lined baking tin

Bake at 180 fan for 50-60 minutes.

Let cool and enjoy with plenty of salted butter!
