CHOCOLATE CHUNK COOKIES

MADE WITH LONJEVITY FIBERFLOUR

INGREDIENTS

FIBERFLOUR: 300g

EGGS: 2

BUTTER: 100g

SUGAR SUBSTITUTE: 100g

VANILLA: 1/2 tsp

BAKING POWDER: 1 tsp

SALT: 4g

SUGAR-FREE CHOCOLATE CHIPS: 200g

Add flour, sugar, salt and baking powder to mixing bowl. Mix using paddle attachment and add butter in small pieces while mixing and continue until consistency of bread crumbs. Add chocolate chunks of chips and mix a little more until combined. Now add eggs and vanilla, continue mixing until ingredients come together adding water a table spoon at a time to achieve your required consistency (more water = less crunchy and softer centres). Using an ice cream scoop drop onto baking sheet/paper, flatten out a little and bake at 170 for 15 minutes, or until golden brown but not burnt like the ones in our video below ;)
