This recipe is much loved in our house. Basically its a cheese blini, super easy and quick to make. Recipe is: 50g ultrafine Fibre flour 2 medium eggs half a spoon baking powder 100g cubed cheese (your choice, I use cheddar and sometimes feta too) chives a few chilli flakes (optional) salt and pepper Mix the batter to a smooth silky consistency, preheat a frying pan on medium heat and melt butter in it. Add the rest of the ingredients to bowl, then spoon into the (non stick a must) pan into the size you want. (I use a small pan and make pan sized ones. Fry over a medium heat until it bubbles through the mix and the edges of the blini are firming up then flip. Should be golden brown and the smell of caramalising cheese should be in the air. Serve with a spread of cream cheese on top when cooked. Around 7-8g carbs for the entire batch.

A new breadmaking machine, Panasonic meant new learnings. 2nd attempt (1st didnt mix properly so utter failure) this has worked a treat. (It was set upside down when first taken out so slightly squashed) I used the basic bread recipe adjusted to quantitys to fit my bread machine (400g flour), with a little butter (same amount less water) and a touch of sugar. Cooked on the fast basic bread recipe. Really chuffed and it tastes great.
