And sorry I just reread your question on melting. Yes it melts, and sticks so use a non stick pan, it then caramalises and is just delicious.

Works a treat, I use a little more baking powder and melted butter instead of olive oil, but the result is similar and superb. Top tip, try adding some small cubes of cheese to it pre-microwave, or some chilli oil.

@Gerry Davies Gerry It depends on the size of the blini, I go bigger for a whole pan blini and about quarter of an inch for smaller one.

Thanks Gerry. All a steep learning curve. Will do this and see how I get on. Flavour wise though it is great.

Update, while good, this bread can be improved on. Initial excitement somewhat tarnished as the bread got heavier and more doughy towards the centre. Tweaks to come.
